Nikka Coffey Malt is a whiskey made using the traditional coffee-style continuous distillation machine (coffee still) owned by Nikka Whiskey. Grain whiskeys usually made from corn are common, but Nikka tried to use barley malt as raw material, distilled in a coffee-style still, to create a new flavor of the original liquor. The current mainstream continuous distiller can improve the purity of alcohol, but it may also remove flavor components. However, the "coffee-style continuous distiller" owned by Nikka is an old-style equipment. Although the distillation efficiency is not as good as modern designs, it can retain the aroma and ingredients brought by the raw materials. This still was invented around 1830 and named after the inventor, Aeneas Coffey.
Masataka Taketsuru, the founder of Nikka Whiskey, once had a dream to introduce a coffee-style continuous distiller to his factory to produce a true blended whiskey. This dream was finally realized in 1963, and official operations began the following year. The coffee-style still that was introduced at that time was considered "extremely old-fashioned" equipment even at the time, which reflected Masataka's insistence on pursuing "real deliciousness".
